Aloo Gobi


Ingredients:
  • 1 small Cauliflower - cut into small florets
  • Potatoes - 2
  • Tomatoes - 2 to 3
  • Jeera - 1 tsp
  • Oil - 3tbsp
  • Salt
  • Bay leaf - 2
  • Ginger garlic paste - 1 tsp
  • Onions - chopped 1 cup
  • Turmeric powder - 1/4 tsp
  • Chilli powder as per taste
  • Coriander powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Coriander leaves or cilantro leaves - to garnish
Preparation:

Heat oil in a pan. Add jeera and bay leaves. When they crackle, add the onions and ginger garlic paste. Fry well till onions turn golden brown and raw smell of garlic goes away.
Add chopped cauliflower, potatoes and sprinkle salt, turmeric powder, coriander powder, chilli powder, garam masala powder. Mix well. Fry for 5 minutes.
Then add some water(about 1/2 cup or little more than that), simmer, cover the pan and cook for 15 minutes. Add tomatoes, mix well and close the lid again.Let it simmer for another 7 minutes or until all water is absorbed and veges are cooked. Garnish with coriander leaves.
Serve with nans/roti/rice.
