Potato capsicum masala fry (Padma's Recipe)

Potato - cut into cubes
Capsicum - chopped into thick pieces
onion - 1
chilli powder
dhaniya powder
mustard seeds
urad dhal
jeera( optional)

In a kadai heat oil and add all the temperings- mustard seeds, urad dhal, jeera. When they splutter add chopped onions and fry till transparent , next add just the capsicum and fry until they are 3/4th cooked...remove from kadai and keep aside. In the same kadai add potato , litttle salt and cover and cook, saute now and then. when they are 3/4 th cooked and the fried capsicum and cook together..check salt or add salt. Finally add the chilli powder and dhaniya powder. Frying seperately won't let the capsicum to get soggy.
