Sura Puttu




Cook Sura pieces in water (fill water till it reaches just a little above the sura). While cooking, add turmeric pdr and some salt. Cook for 10 - 15 mins depending on how thick the fish is. Once cooked, strain the water, remove the skin and bones from the fishes and scramble it to crumbs.

In a wide pan, add 2 tbsp of oil. When oil is hot add some fennel seeds + garlic pods finely chopped (10 pods) + curry leaves + Finely chopped onion (1 large) + 7 to 8 green chillies chopped or slit . Saute the onion till light brown. To this add turmeric pdr + chilli pdr (1 tsp), After the masala smell leaves add sura to it and mix well. Adjust salt and sprinkle a lil pepper pdr to it. Saute it well till the fish becomes very dry. It tastes more yummy when the fish is browned a little too. Make sure you do not burn it though. Garnish with some coriander leaves.

Tasty and yummy yumm sura putu is ready to serve. This recipe is sure a keeper for me :) cos it earned some real good words from hubby dear. The kids loved it too. So what more would i ask :)

Mushroom Curry



Onion  - 1 large
Tomato - 1 large
Mushroom - 1 packet
Ginger garlic paste - 1 tbsp
Turmeric pdr - 1/4 tsp
Butter - 1 tbsp
Peppercorns + cumin seeds + garlic pods - grind to 2 tbsp coarse paste
Coriander pdr - 1 tbsp
Cumin pdr - 1 tsp
Chili pdr - 2 tsp
Salt - as req
Coriander leaves - for garnish



In a pan, add whole garam masala + sliced onion. Once the onion turns translucent add ginger garlic paste + turmeric pdr. After the raw smell from the gg paste vanishes, add tomato. After the tomato turns real mushy add mushroom, add a lil water and cook closed for 5 mins. Set this aside (make sure there is not much water left behind).

In the same pan, add 1tbsp butter + (peppercorns + cumin seeds + garlic coarse paste). Saute for a minute and then add coriander pdr ( 1 tbsp) + cumin pdr (1 tsp) + chili pdr (2 tsp). Masala should not get burned smell, so a 1 tbsp water and saute on medium flame till the raw smell leaves. Then add the cooked mushroom curry to this, adjust salt and garnish with some coriander leaves.

Kadaai Chicken



In a pan, add oil. once the oil is hot, add whole garam masala, whole red chillies(2 nos) + onion (1 large) +salt and turmeric pdr. Once the onion is sauted well, add ginger garlic paste and saute till the raw smell leaves. Then add the chicken pieces and cook closed on medium flame for 15 mins. Then add kadaai masala and for some coloring add kashmiri chilli (a tsp). Cook for 5 more minutes and then add tomato puree (2 large). Mix it well and cook open on medium flame for 10 to 15 more minutes. The tomato should get nicely cooked. Now add slices of capsicum (bell pepper) and onion to this curry. Cook till the capsicum tastes gets into the curry. Adjust salt. Add crushed kasthuri methi, leftover kadaai masala and garnish with some coriander leaves.

Kadaai masala: Dry roast and grind to powder
Coriander seeds - 1 tbsp
Peppercorns - 1/2 tbsp
Cumin seeds - 1 tsp
Red Chillies - 8 nos
Fennel seeds - 1 tsp
Fenugreek leaves - add this at the last stage of roast and switch off immediately

Karadayan Nonbu Adai recipes

Karadayan Nonbu , which is also called as Savitri Viratham is observed by married woman for the wellbeing and Long life of their husbands and unmarried girls do pray for a good husband . This nonbu falls on the last day of the Maasi month . 

This year it is celebrated on Friday, 14th march. (14.03.2014)

Cheese quesadilla



Ingredients:

Uncooked Tortilla - 2 nos (any kind)
Cheese - 1 cup grated cheese, sharp Cheddar or Mexican blend
Butter - 2 tbsp

For Garnish:

Sour cream
Salsa
guacamole 



Cook the Tortillas in a pan, both sides. Spread butter on it while cooking. Layer the cheese over one of the tortilla and then top it up with the other tortilla. Cook over medium heat till the cheese melts down and the tortillas stick to each other. Flip it over in the middle if needed. You do not want to burn the tortillas while doing this :) Once done, serve it with some sour cream topped over it. You can also use salsa and guacamole.
