Cabbage - Carrot Salad


Saw this here in Priya's blog ...and tried it immediately .... though I have changed according to our taste but the idea of adding nuts ...was really very helpful , my son enjoyed this salad ... Thanks a lot Priya .

Nothing much to say about the method and ingredients needed ...still ...
Ingredients needed :
  • cabbage grated - 1 cup
  • carrot grated - 1 cup
  • Cashews and Badam - 10 nos.
  • lemon juice - little
  • salt and pepper - little
  • oil -1/2 tsp.
Method : 

Chop cashews and badam into small pieces. In a kadai , add oil and fry them slightly ...if needed just sprinkle little salt and pepper powder. Peel the skin off carrot and grate it finely ...then grate the cabbage. In a bowl mix it together and add very little salt + pepper + lemon juice and mix the fried nuts ...and serve it.
    Kids love this salad a lot ...u can add raisins too ... simple and yummy salad is ready ...

    Sago Murrukku - Icc




    The recipe chosen for March month in Indian Cooking Challenge by Srivalli is Sogo murukku ...


    Ingredients needed :
    • Sago / jevarisi - 1/2 cup
    • Rice flour - 1 cup
    • Gram flour - 1/2 cup
    • Bengal gram dhal / Pottu Kadalai - 3/4 cup
    • Salt
    • Chilli Powder - 1/2 tsp.
    • Oil - for deep frying

    Method : 

    Soak Sago / jevarisi in buttermilk for minimum 3 hours ....it depends upon the size of ur sago ...u can check whether it is soaked well , by taking one soaked sago in hand and press it ...it should be very soft ...
     
    I have used store brought rice flour and gram flour ...I have just powdered in mixie the bengal gram / pottu kadalai finely .... keep ready all these flour ....
    in a kadai add oil for deep frying and keep it in medium high ....in a bowl add soaked sago (photo 1) + pottukadalai / bengal gram flour (photo 2) + rice flour (photo 3) + gram flour (photo 4 ) + salt , chilli powder and add hot oil 2 opr 3 tsps. (photo 5 ) then mix all the ingredients well and knead it into dough , by adding little water (photo 7) once the oil is hot using the murukku maker , press it directly in hot oil ....I was not getting it as in proper shapes as how we make normal ones ....as sogo was there it was breaking in between ....so pressed the whole in keeping in one place ....so that i got it in perfect shape ...this method was new to me but came out so well and it was very crispy ...

      Vegetable Fried Rice

      Ingredients needed :
      • Vegetables - (carrot , cauliflower , beans )
      • Cooked Rice - 1 cup
      • Jeera - little
      • Fennel seeds - little
      • Cloves - 4 or 5
      • Garlic pods - 2
      • Pepper powder - little
      • Oil - little
      • Salt
      Method : 

      Chop carrots and beans lengthwise and cut cauliflower into each florets and set aside ...Pressure cook the rice seperately and set aside in a vessel add enough water and boil the cauliflowers+ salt till tender and keep it ready ..take a pressure cooker and add little oil , once it is hot add Jeera + fennel seeds+cloves + garlic pods +carrot and beans + salt + pepper powder and fry till it gets softs then add the cauliflowers and fry for few mins ....now spread the cooked rice well so that it doesn't stick together .... add this cooked veges and mix it gently serve hot with spicy gravies. Easy Veg. fried rice ready ...

        Badam - Cashew Cake

        Ingredients needed :
        • Cashew - 1 cup
        • Badam - 1 cup
        • Sugar - 1 1/2 cups
        • Rawa - 1 cup
        • Milk Powder - 1 cup
        • Milk - 1 cup
        • Ghee - 1 cup
        Method :

        Soak badam overnight and peel the skin off and keep it ready . soak Cashews for 30 mins and set aside now grind badam , cashew by adding little milk into fine paste . (picture 2 )
        Heat a kadai and add ghee once it melts , add sugar + rawa and mix it well ...it will start dissolving .... (picture 3 ) then add milk powder + badam - cashew paste and keep stirring it continuosly ...if needed u can add milk and ghee little  meanwhile take a plate and grease it with ghee when the cake gets thick carefuly take a little spoon of the cake mix and drop it in plate ...it should be easily formed like into a ball shape ...in that consistency. Switch off the gas and pour it in the plate and when cut it in to square or diamond shape . Once it is completely cooled off ...u can take out the pieces ...
