Sweet Corn Kofta


Ingredients needed :
  • Sweet corn (frozen) - 1 cup
  • Bread - 2
  • Potato - 3
  • Onion - 1
  • Green chillies
  • Salt
  • Oil 
  • lemon juice


Method :


Chop onions and heat kadai and add 1 tsp. oil and fry onions till done ...peel potato skin and chop it into pieces and take a saucepan and add little water and  boil the potatoes till done, once done take the potato pieces and allow it cool well and then mash it and set aside, as I used frozen sweet corn , bring it to room  temperature .

Take a blender and grind bread using whip button and make it powder and set aside ...then grind sweet corn + green chillies coarsely .. and transfer it to a bowl and add mashed potato + salt + lemon juice + bread crumbs and mix it well ...then take a small portion of the mixture and shape it in balls and keep it ready ...


Heat a paniyaram pan and add little oil in each hole and place the potato - sweet corn balls and fry it in medium heat till done and serve it with tomato sauce ..

      Cauliflower Paratha



      Ingredients needed : 
      for stuffing :
      • Cauliflower - 1/2
      • Onion - 2
      • Coriander leaves
      • Salt
      • Turmeric powder 
      • Chilli powder 
      • Dhaniya powder
      • Jeera powder 
      • Lemon juice
      For outer covering : 
      • Wheat flour 
      • Water 
      • Salt 
      • Oil
      Method : 


      Take a bowl add wheat flour + salt + oil and mix it well and add water little by little knead it well and set aside for 15 to 20 mins.

      for stuffing :

      Clean cauliflower well and spread it on kitchen towel and allow it to dry well ...Chop onions , coriander leaves finely ...grate cauliflower finely ...


      Heat kadai and add oil + onion + salt and fry for few mins . then finally add the grated cauliflower + chilli powder +turmeric powder + jeera powder + dhaniya powder and fry for few mins .. once done add coriander leaves + lemon juice and mix it well ...once done transfer it to a plate and allow it to cool well ...



      Now take a small ball size of the dough and make a cup shape with the dough and place a spoon of the cauliflower curry and join all the ends and roll the dough like chapathi ...roll all the dough ..once done , heat a tawa and fry chapathi on both sides till done .

      Moong Dhal Pakoda Gravy



      Ingredients needed :
      • Moong dhal Pakoda - 10
      • Onion - 1
      • Salt
      • Curry leaves 
      • Coriander leaves
      • Chilli powder - 1/2 tsp.
      • Turmeric powder - 1/4 tsp.
      • Dhaniya powder - 1/4 tsp.
      • Jeera powder  - 1/4 tsp.
      • Fennel seeds 
      To grind:
      • Onion -2
      • Tomato  - 1
      • Grated Coconut -1 cup
      • Cashew - 5 ( or )
      • Poppy seeds  - little 


      Method :


      To make Pakoda , click here . Roughly chop onions and tomatoes ..Heat a kadai and add a tsp. of oil and fry the onions well then add the tomatoes , allow it to cool well then transfer it to a blender and along with that add the grated coconut , cashews or poppy seeds and grind them into a fine paste...


      If you wish , you can chop 1 onion finely and heat a kadai and add oil and add fennel seeds + chopped onion + curry leaves + salt and fry for few mins. then add the  grounded paste + chilli powder + jeera powder + dhaniya powder + turmeric powder + reqd. amount of water and allow it to cook well ...


      when the gravy is almost done ..add the pakodas and allow it cook for just few mins ...then add chopped coriander leaves and serve hot with chapati or rice .

      Moong dhal Pakoda


      Ingredients needed :
      • Moong dhal (Pasi paruppu) - 1 cup
      • Jeera - 1/2 tsp.
      • Dried red chilli - 2 
      • Hing powder 
      • Salt
      • Oil
      Method :

      Wash and soak moong dhal for 1 hour , then drain the excess water and take a blender and add the moong dhal + Jeera + dried red chilli and grind it coarsely by just sprinkling little water . Once done take it in a bowl and add salt , hing powder and mix it well ..

      Heat a paniyaram pan and add oil in each hole and take a spoon of dough and drop it in the hole ...and allow it to cook well on both sides ...keep the flame in medium heat and cook it as it take time to cook inside.

      Moong dhal pakoda is ready .

      I am not sure about deep frying it ...If you wish you can do it . As I used this pakoda and made gravy as a side dish for chapathi will post the recipe soon.

      French fries



      Hi all ,


      Hope you all are doing good . Thanks for all your wishes, I am better now. For past few days my son is having chicken pox and was fully engaged with him. He is also getting better now , did not expect May month will be this worst ..hoping to get back with my routine soon...well coming to this recipe ,made this long back, but posting it today...saw this in Aarthi's blog here came out perfect. My son loved it a lot. Thanks Aarthi for sharing the recipe...

      Ingredients needed :
      • Potato 
      • Salt
      • Chilli powder 
      • Oil 
      Method : 

      Clean the potatoes and remove the skin and slice it lengthwise slightly thicker in size .. Take a pan and add water + little salt + chilli powder and allow it to boil well then add the potatoes and allow it to cook till it gets tender (you can check by inserting a fork ) ...then switch off the flame and drain the water completely and allow it to cool well ...

      Heat a kadai and add oil for deep frying and once the oil is hot drop cooked potatoes and fry it well till done ...once done drain them in paper towel, when it is slightly hot add the chilli powder + salt and gently toss them so that it gets coated evenly ...and enjoy the french fries .

        Thanks for all your wonderful comments for my previous post .. 

        For past one month I was not feeling well , had viral fever and from Tuesday, I was  having sever pain in my left leg foot and today went to doctor and he said that I am having slight hairline fracture ...and may take time to recover , may be 3 or 4 weeks ...

        I am unable to sit for long hours so will not be that regular in blogging ...will try to post recipes whenever possible and will try to  visit ur blogs too .

        Stuffed kofta gravy


        Made few changes to Kavitha's Malai Kofta. For the gravy part either u can follow her recipe or the recipe given here ..


        Ingredients :
        for Kofta : 
        • Potato   - 3 or 4
        • Bread (brown / white ) - 3 slices 
        • cornflour - little
        • Salt
        • Oil 
        for stuffing :
        • Carrot - 1
        • Paneer- little
        • Dry grapes (opt.) 
        • Lime juice + salt - little
        Method :

        Peel the potato skin and chop them roughly and boil it in a pan with little water adding little salt, once it is boiled well allow it to cool completely and mash it well in a blender grind the bread slices into powder .. take a bowl and add the bread powder + salt + mashed potatoes and mix it well ...

        In a bowl grate paneer and peel the carrot skin and grate the carrots too and add the dried grapes and add little lime juice and sprinkle salt  ..and mix it well...

        Now take small ball size of potato mixture and flatten it slightly and place the stuffing mixture (paneer + carrot ) and roll it well and set aside ...


        If you wish you can deep fry the balls or can use the paniyaram pan and fry it and set aside ..
        for gravy :
        • Onion - 2
        • Tomato - 3
        • Green Capsicum - 1
        • Chilli powder - 1/2 tsp.
        • Jeera powder - 1/4 tsp.
        • Dhaniya powder - 1/4 tsp.
        • Coriander leaves - little
        • Oil
        • Salt
         for grinding : 
        • Grated Coconut - 1/2 cup
        • Poppy seeds - little
        • Cloves  - 2 
        • Garlic pods - 2
        • Ginger - little
        grind the above ingredients with little water and make it into fine paste ..


        Method :

        Chop onion , tomatoes, capsicum ...Heat a kadai and add little oil and fry the onions + capsicum + tomatoes + salt + grounded paste and allow it to cook well then add the chilli powder + jeera powder + dhaniya powder and add little water and allow it to cook well and garnish it with coriander leaves ..just before serving add the koftas and serve it hot with chapathi / roti .

        Red Cow peas Salad / Raita


        Simple yet healthy salad / raitha ..I am sure kids will also love it ..I had some cooked red lobiya so used it .

        Ingredients needed :
        • Vegetables:Onions +carrot +cabbage +cucumber 
        • Fruits : Apple + seedless black or green grapes 
        • Red Cow peas / Lobiya / Karamani - 1 cup 
        • Low fat yogurt / curd - 2 cup 
        • Lemon juice + salt + chat masala(opt.) + pepper powder 
        Method : 


        Soak red cowpeas  overnight  and pressure cook it with little salt ..once done drain the water and take the cooked peas and set aside ...you can use the water while preparing gravies or can make chapathi dough with this water ...



        In a small bowl mix curd + salt + lemon juice + pepper powder + chat masala powder and mix it well. Clean and chop onions,cabbage,cucumber,apple finely ...peel carrot skin and grate it ..cut grapes in to half . Take a bowl and add the chopped veggies and fruits + cooked red cow peas + curd mixture and mix it well and enjoy your raita / salad

        Royal icing


        This recipe along with photos was shared by Lavanya.
        • 2 large eggs (egg white only)
        • 2 tsp lemon juice.


        For flooding consistency, (carrot pic)
        • 3 cups of confectioner sugar.


        Now to you beater/ processor, at low speed beat the egg white add the sugar in batches. The right consistency for flooding when we drop it from a spoon, the batter should flow in thick batches (something similar to string consistency in jaggery).




        For pipping consistency icing add more sugar until it has a consistency similar to that of mayonnaise.  (rabbit pic) In more appropriate terms,

        • 1 large egg (egg white only)
        • 1 tsp lemon juice
        • about 2 cups of confectioner sugar.


        remember not to keep the frosting open. This forms a solid layer on the top of the icing. Always cover with usual plastic food wrapper. Else we have the scrap out the solid layer first before using the frosting.  Also, when you pipping, make sure you always place it on a damp cloth/paper. I used my coffee cup. Covered the bottom of the cup with damp paper towel and when ever I had to keep my pipping down, i placed in into the cup containing the damp towel. This prevented the icing from forming a thick solid layer.



        Though the process is little time taking, the output is always enjoyable. Specially for the kids, I bet they will for sure love the icing on their sugar cookies and cakes

        Vanilla cake with chocolate frosting


        Thanks to Lavanya for sharing this recipe along with photos..

        Cake:

        • 1 1/2 all purpose flour
        • 1 1/2 tsp baking powder
        • 1 cup sugar
        • 2 tsp vanilla extract
        • 2 large eggs
        • 1/2 cup oil (else 1/2 cup butter= 1 stick butter)
        • 3/4 cup milk



        Mix the wet ingredients and dry ingredients separately. Now in batches mix the dry ingredients with the wet.Beat until silky.

        I used a mini cake pan set and filled my greased mini cake pan with the batter. Bake it at 350F (180 C) for about 20mins or until when picked with a tooth pick, nothing sticks to the pick.


        Now cut the top layer of the cake and form a even platform for both the mini cake.Fill the gap with vanilla frosting. and place one over the other. Now cover the cake with chocolate frosting.



        Vanilla frosting.:
        • 1 cup heavy whipping cream
        • 2 tsp confectioner sugar.
        • 2 tsp vanilla extract.



        Chocolate frosting:
        • 1 cup heavy whipping cream
        • 2 tsp confectioner sugar
        • 2 tsp unsweetened cocoa powder


        For frosting, make sure you use a stainless steel bowl. Before starting the procedure freeze the utensil, blade of the mixer for 10 mins in your freezer. Frosting melts really quick so make sure everything is real cold. Mix the ingredients in low speed first and then increase the beater speed gradually until thick frosting is formed. Make sure the frosting is really thick else, it melts real fast.


        Decorate your cake with frosting.

        Sweet Paratha



        My son likes Peshwari naan a lot tried making it at home ..I used the sweet somasi stuffing and made the paratha ..infact same process just that this is tawa fried ... I am sure kids love this a lot .

        Ingredients needed : 

        for paratha :
        • Maida - 1 cup
        • Salt - a pinch
        • Oil
        • Water
        Method :

        Take a bowl add in maida + salt + oil and mix it well and then add water little by little and knead it well till a soft dough is formed ...and allow it to rest for few mins. meanwhile prepare the stuffing ...
         

        for stuffing :  

         

         (adjust sugar as per you taste) 
        • Grated coconut - 1 cup
        • Chutney dhal / Pottu kadalai - 1/2 cup
        • Poppy seeds - little
        • Dry Raisins - 10 - 15
        • Sugar - 1 cup
        • Elachi powder - little
        Method : 

        Grate coconut and keep it aside ..take a blender and add the chutney dhal and using the pulse button grind coarsely ...and transfer it to a bowl and to that add the dried raisins + elachi powder + sugar + poppy seeds + coconut and mix it well..

        Method to make Paratha : 

        Take a small ball size of dough and make it like a cup and take a spoon of stuffing and place it in the cup and bring the sides of the dough together and roll it into chapathi ...if needed use some flour for dusting ..

        Heat a tawa and place the paratha and fry it in both sides ..if needed u can use ghee to fry .

        keerai masiyal


        You can make this using Arai keerai / Mullai keerai . you can mix it with hot rice + ghee and enjoy . My mom uses the thayir mathu for keerai masiyal ...but my Mother -in-law grinds it in mixie ...here in Uk as I don't have mathu...so I have also grinded it in mixie ..both the ways I love it ...you can follow whichever method you want ...I have given the method as how I did it .

        Ingredients needed : 
        • Keerai  - 2 bunch
        • Salt
        • Hing powder
        • Mustard seeds
        • Urid dhal
        • Jeera
        • Dried red chilli 
        • Oil
        Method : 

        Remove the root ends and wash the bunch well and roughly chop the keerai and heat a kadai and very little water and and the chopped keerai and allow it to boil well ...then drain excess water if any ...then take a blender and add the keerai and when it is cooled ...grind it well just for few secs. will do, then transfer it to the the bowl and add salt + hing powder ..now heat the kadai again and add a tsp. of oil and temper it with mustard seeds when it starts to splutter add urid dhal+ jeera+ dried red chilli and add it to the keerai and mix well and serve it ..

        ( I couldn't get dried red chilli for few days near my place ...there was no stock in any shop ...so had to use green chilli for tempering )

        Mixed Fruit & Vegetable Salad


        This is very simple salad ...you can use veggies and fruits of your choice ...kids will surely love this ...(I have used the store brought salad greens pack )
        • Vegetables:Onions +carrot +cabbage +lettuce +cucumber + tomatoes
        • Fruits : Apple + seedless green grapes 
        • Nuts : badam + cashews  - finely chopped ..
        • Lemon juice + salt + chat masala(opt.) + pepper powder


        Clean and chop all the veggies finely and chop apple finely , cut grapes into 2 slices ...take a bowl and mix all chopped vegetables + fruits + nuts + lemon juice + salt + pepper powder + chat masala (opt.) and toss it well and enjoy ur salad...

        Sweet Somasi


        Sweet Somasi / Gujjiyas / karchikka / Karjikai :  these are the names for this sweets .

        Ingredients needed :

        for outer covering :
        • Maida - 1 cup
        • Salt - a pinch

        • Water
        Method :

        Take a bowl add in maida + salt + oil and mix it well and then add water little by little and knead it well till a soft dough is formed ...and allow it to rest for few mins. meanwhile prepare the stuffing ...

        • Grated coconut - 1 cup
        • Chutney dhal / Pottu kadalai - 1/2 cup
        • Poppy seeds - little
        • Dry Raisins - 10 - 15
        • Sugar - 1 cup
        • Elachi powder - little
        Method : 

        Grate coconut and keep it aside ..take a blender and add the chutney dhal and using the pulse button grind coarsely ...and transfer it to a bowl and to that add the dried raisins + elachi powder + sugar + poppy seeds + coconut and mix it well..


        Method to make the somasi :

        Take small ball size of the dough and roll it like how we make it for poori then place it on the mould and place the stuffing in one side and close the mould tightly and take all excess dough if any and place it in a plate ...

        Heat a kadai and add oil for deep frying , once the oil is hot gently drop in the somasi and deep fry it till done on both the sides ...

        If you don't have the mould , you can roll it like poori and place the stuffing in one side and bring the other part and close it and press the ends with fork and then deep fry it ..

        Made these for my son's birthday on April 2nd. and these are the gifts he recd.

        Maida Biscuits


        The  tiny biscuits /  thukkada  recipe along with photo was sent by Lavanya . Hope you all like both the version ..


        Savory biscuits.:

        Maida 1 cup
        Salt to taste
        Chilli powder 2 tsp
        hing ( a pinch)
        oil.

        Make like a chapati dough. Roll as thin as possible like that for a chapati.
        Cut it in cubes using knife. Deep fry the cubes.

        Sweet biscuits.:
         
        Maida 1 cup
        sugar 1 1/2 cup
        cardamon powder
        oil - 2tsp

        Its the same procedure like that for savory biscuits. Since its sweet version, the dough will be more sticky. Use enough flour while rolling as chapati. Cut into small cubes. Deep fry the cubes.


        Its a very easy evening snack to make.

        Liver fry



        Preparation:

        For Masala paste:
        In oil, saute onion (half) + peppercorns (1 spoon) + cinnamon stick(1) + cloves(2) + cardamom(1) + fennel seeds(1 tbsp) + green chillies(4 nos) + garlic pods(5 nos) + ginger + coconut(an inch). Once roasted, set it aside. After it cools down, ground to a fine paste adding required amount of water.

        Cook the liver separately:
        Pressure cook the liver (remember liver takes a lot more whistles to cook well) with some water, turmeric pdr, salt and chilli pdr (1tsp)

        Rest of the curry preparation:
        In a pan, add whole garam masala (cloves, cinnamon, bay leaf), onion (1 nos) and some garlic pods  + curry leaves + ground paste + coriander pdr (1 or 2 tbsp) + cooked liver and allow it to cook well till the water drains out. Add salt as required. You can switch off the flame either during the curry or at a dry consistency, depending upon your taste. When almost ready to switch off the stove, add some ground pepper pdr. Garnish with coriander leaves.

        Couscous Potato Cutlet


        I wanted to try ragada patties , followed the same recipe except for patties I tried making it with Couscous. Loved this a lot ...you can either make it with the peas gravy or just can have the patties alone along with salad and bread

        Ingredients needed :
        • Couscous - 1 cup
        • Potatoes - 2
        • Carrot (Opt.) - 1 
        • Chilli powder - 1/4 tsp.
        • Salt
        • Oil


        Method :

        Peel carrot skin and grate it and set aside ..peel the potato skin and chop it into pieces and take a pan and boil it well with reqd. amount of water, once done take the potato pieces alone and allow it to cool completely , then mash the potatoes and keep it aside ...if you have any excess water , don't discard it use it to cook the couscous.

        In the same pan add little more water and allow it to boil well then add a tsp. of oil + salt and add the couscous and switch off the flame and keep it closed for few mins ..couscous will observe all water, take a fork and spread the grains gently .

        Take a bowl and add the couscous + mashed potatoes + grated carrot + salt + chilli powder and mix it well ...then take a little mixture and shape it into patties and arrange it in a plate ...once done keep the patties in freezer for 10 -15 mins. (this helps in frying the patties without breaking )..

        Take a non stick tava and place the patties and add oil and fry it well on both sides and then serve it ...

        Vendaikaai puli/kara kulambu




        Ingredients:
        • Oil
        • Onion - 1 large
        • chilli pdr - 1 tsp
        • turmeric pdr - 1/4 tsp
        • Fenugreek seeds - 1/4 tsp
        • garlic pods - 6 or 7 nos
        • curry leaves
        • Okra 
        • Tomato - 1 large
        • Coriander pdr - 1 tbsp
        • salt
        • Tamarind (soaked in water)
        • Coconut - 1 inch
        • Fennel seeds - 1 tbsp

        Preparation: 

        In oil, add half on a large onion, roughly cut and saute it well. Then simmer the flame and add a tsp of chilli pdr, turmeric pdr. Switch off the flame and move this to a plate. Once it cools, grind it to almost fine paste.

        In the pan, add oil. Once hot, add fenugreek seed, curry leaves. Make sure you do not burn the seeds, cos they would give a bitter taste if burnt. Add finely chopped onions + garlic pods. Saute it to change color and then the Okra. When the okra is 3/4th cooked (the stickyness should have gone), add tomato slices. After the tomato mashes well and the okra is well cooked, add some turmeric pdr, salt, chilli pdr (1/2 tsp), coriander pdr (1 tbsp), already ground paste and let it cook till the spice smell leaves the curry.

        After the oil separates from the kulambu, add the tamarind paste and cook closed for atleast 5 mins. Now, add the coconut and fennel ground paste (fine paste) to the curry and simmer the flame. Let it cook for 5 more mins and then switch off the flame.

        Yummy okra puli/kara kulambu is ready to serve.

        Mixed Vegetable Paratha



        Ingredients needed :
        for making the stuffing :
        • Mixed vegetable - 2 cup
        • Onion - 2
        • Turmeric powder (opt.) - little
        • Jeera powder - 1/4 tsp.
        • Chilli powder - 1/2 tsp.
        • lemon juice - little
        • Pav bhaji masala (opt.)- 1/4 tsp.
        • Salt 
        • Oil - 2 tsp.
         
        Method : for stuffing :

        Vegetables I used : 1/2 broccoli , cabbage , carrot , potato , cauliflower .

        First peel the skin of potato, chop and boil it with little water till done and mash it well and set aside , peel the skin of carrot and grate it , then grate cabbage and broccoli , cauliflower .. Chop onions finely ..

        Heat a kadai and 2 tsp. of oil + onions and fry for few mins. ...then add the grate veggies + jeera powder + turmeric powder + salt + lemon juice + pav bhaji masala powder + chilli powder and fry it for few mins. then add the mashed potatoes and allow it to cook for few more mins. once done allow it to cool well ..

        for making the dough : 
        • Wheat flour 
        • Oil
        • Salt
        • Water
        Method : for making paratha :

        Method 1 :

        Take a bowl and add wheat flour + oil + salt and mix it well then add the cooked vegetable mixture and mix it well by just sprinkling little water and make dough and allow it to sit for 15-20 mins ..then take a small ball size dough and roll it like normal chapathi ...Heat a non stick tava and place the rolled paratha and fry it in both sides till done by adding little oil if needed . (this is the method I followed it )

        Method 2 :

        Make a small ball size of the mixed veggies and keep it ready ...In a bowl add wheat flour + oil + salt and mix it well and then add water and make a stiff dough and take a small ball size of the dough and roll it into small chapathi and place the stuffing in middle and bring together all the edges and roll it again like chapathi and heat it on tava on both sides till done .

        Goes excellent with raitha or pickle
