Ingredients:
- Oil or Ghee
- Basmati Rice - 1 cup
- Whole garam masala (Cloves - 3, Cinnamon - 1 inch, Cardamom- 1)
- Onion - 1 medium
- Turmeric pdr - 1/4 tsp
- salt
- green chilli - 1 slit
- veggies of ur choice
- Tomato - 1 medium
- Biryani masala - 1 tbsp
- Water - 1.5 cups
- Ginger garlic paste - 1.5 tsp
- Methi leaves - 6 or 7
- Fried onion and corriander leaves for garnishing
Preparation:
Presoak Basmati Rice in water for about 15 to 30 mins. In a pressure cooker, add Oil + Whole garam masala + Onion + turmeric pdr--& saute till Onion turns golden brown in color. Now add Ginger garlic paste & saute till the raw smell leaves. Add green chilli + Tomato + Veggies of ur choice (I used carrot, Brocolli, beans , Mushroom, Red Capsicum, yellow Capsicum, Green Capsicum, Potatoes, few Cauliflower florets, Peas) + 6 to 10 Methi leaves + Biryani Masala + salt
After making sure that the veggies are 80% cooked, add water (proportion is 1 cup of rice : 1.5 cup of water)Once the water starts boiling, add rice and check the salt. After checking the salt, close the lid and allow 2 whistles. Alternatively, you can also cook it in an electric rice cooker. Garnish with fried onion and coriander leaves. Goes excellent with Raitha.
