Aloo Paratha



Ingredients needed : 

To make Dough : 
  • Wheat flour - 3 cups
  • Maida - 1.5 cup
  • Ajwain - little
  • Salt
  • Oil
  • Water to knead
To make Stuffing:
  • Potato - 4 
  • Coriander leaves - little
  • Green chili - 1 
  • Turmeric powder - little
  • Hing powder - little
  • Salt 

Method : 

                In a wide bowl add wheat flour + maida + salt + ajwain seeds + oil  and mix it and to this add water little by little and make a soft dough and keep it covered and set aside for few minutes ..

Roughly chop potatoes and boil it till done then peel the skin and mash it to this add finely chopped green chili + coriander leaves + turmeric powder + salt + hing powder and mix it well ...

To make paratha , take a small ball size of the dough and make a small cup and place 1 spoon of potato mixture in the center and bring all the edges together and gently flatten it and dust it with maida flour and 
roll into circle gently ..

soft and yummy Aloo paratha ready ..goes excellent with raita and pickle .

Soya Kheema Roll



Saw this recipe here. Made few changes to the recipe and tried it, you can also use Soya grnaules too ..

Ingredients needed :

  • Chapathi - 2
  • Soya chunks - 1 cup
  • Onion - 3
  • Tomato - 2
  • Carrot - 1
  • Coriander leaves - little
  • Chili powder - 1/2 tsp.
  • Turmeric powder - 1/4 tsp.
  • Jeera powder - little
  • Dhaniya powder - little
  • Garam masala powder - little
  • Lemon juice - little
  • Salt 
  • Oil


Method : 

          Heat a pan add water + little salt and allow it to boil well to this add soya chunks and cook it for few minutes ...once done drain excess water if any and wash soya chunks in cold water well and squeeze chunks and remove the excess water and set aside. 

Peel skin of carrot and grate it . Chop onions, tomatoes, coriander leaves finely ..Heat a kadai and add oil + onions + Slat  and fry well to this add tomatoes and cook for few more minutes to this add jeera powder + dhaniya powder + chili powder + turmeric powder + garam masala powder and mix it to this add grated carrots and cooked soya chunks and mix it well and cook for few more minutes once done add lemon juice and mix it well and switch off the flame and allow it to cool ..

Meanwhile , prepare chapathi and take little soya kheema and place it in a corner of chapathi and roll it tightly and serve it .. Goes excellent with bread too.

Masala Kuzhi Paniyaram


Ingredients needed:
  • Paniyaram Batter  - check here
  • Onion - 2
  • Carrot - 1
  • Hing - little
  • Green Chili - 1 
  • Ginger - little
  • Coriander leaves - little
  • Curry leaves - 1 string
  • Salt - little
  • Oil
To temper : 
  • Oil
  • Mustard seeds
  • Urid dhal 
  • Jeera 

Method: 

Chop onions , ginger, green chili,  corainder leaves , curry leaves finely , peel carrot skin and grate it ..Heat a small pan and add oil and temper mustard seeds + urid dhal + jeera

Take  batter in a bowl to this add onions + carrot + coriander leaves + curry leaves + green chili + ginger + hing powder + salt + tempered ingredients and mix it well ..if needed add very little water ..

Heat paniyaram pan and add oil in each circle and batter and allow it to cook well , keep the flame in medium heat so that the batter gets cooked well ...after few mins turn it slowly and cook it in other side too..Serve hot with chutney / pickle / Idli milagai podi .

Masala oats

Ingredients:
  • Regular oats - 1 cup 
  • Frozen or regular peas  - 1/4 cup
To coarsely grind : 
  • coriander - 1 tbsp
  • Peppercorns - 1 tbsp 
  • Cumin - 1 tsp.
To temper :

  • Cumin - 1 tsp.


Method : 

In a kadai heat 1 tbsp oil and temper with cumin . In the meantime coarsely grind coriander, peppercorns and cumin with pestle and mortar or mixie. 

Add the frozen peas in the oil and slightly fry them. Add salt to taste and when the peas starts to split, add the coarsely grinded masala. Add water and cook the peas. 

When the peas is almost done add oats and cook (method more similar to how we cook veggies while making kichdi). Cook the oats till its completely cooked.
Best to add buttermilk or rasam at the end.

Peas Paratha



Ingredients needed :

For outer dough:
  • Wheat flour 
  • Salt
  • Water
For Stuffing:
  • Green peas 
  • Salt
  • Turmeric powder
  • Chili powder 
  • Garam Masala powder


Method :

For chapathi dough : 

           Take a bowl add wheat flour + salt and mix it well and add water little by little and make soft dough and cover it and set aside. 

For stuffing :

              Soak dried green peas overnight and add little salt and pressure cook it till done..drain water and allow it to cool well  then grind it in mixer ...you will get powdered consistency ...

Heat a kadai add 2 tsp. oil and then add the powdered green peas + turmeric powder + chili powder + garam masala powder and cook it for few mins. allow it to cool well...if needed u can make small ball size and keep it aside .

Take a small ball size of the  chapathi dough and make cup shape and place the stuffing and bring the edges together and dust with flour and roll it like chapathi ...and heat a tawa and fry the paratha on both sides apply oil if needed .

Yummy parathas are ready and serve it with pickle and curd . 

You can make this paratha using Maida flour also .

Paneer Paratha



Ingredients needed: 

For Roti/Chapathi :
  • Wheat flour 
  • Water
  • Salt
  • Oil
For Stuffing:
  • Paneer
  • Chili powder
  • Salt
  • Coriander leaves (Opt.)


Method: 

                In a bowl, grate paneer to this add chili powder + salt and if adding coriander leaves , then finally chop it and add it to the grated paneer and mix it well and set aside.

In a separate bowl mix Wheat flour + salt and with required amount of water mix it well and make soft dough ..take a small ball size of the dough and make it like a cup and place a spoon of paneer stuffing and close the edges and then dust it with wheat flour and roll it in a roti ...once done, heat a tawa and fry rolled roti / chapathi and add little oil if needed and cook it well till done. 

Serve hot with pickle and curd or goes well with dal tadka.

Kanchipuram Idli

Saw this recipe here . As I did not have proper vessel , so made it just like normal idli. 

Ingredients needed:

  • Idli rice - 1 cup
  • Raw rice - 1 cup
  • Urid dhal - 3/4 cup
  • Methi seeds - little
  • Salt
To temper :
  • Ghee
  • Mustard seeds
  • Jeera 
  • Black pepper
  • Cashews
  • Ginger
  • Green chili
  • Curry leaves
  • Coriander leaves
  • Hing powder



Method :

                    In a vessel soak Urid dhal and methi seeds together. And in a separate vessel soak idli rice + raw rice together for 6 to 8 hours. Grind bit coarsely soaked urid + methi first and keep it in a vessel and then grind rice ...to this add salt and mix it well and allow it to ferment well. (You can grind it in grinder or mixie. I have used mixie). 

Before preparing idli , clean and chop ginger , green chili , curry leaves, coriander leaves and set aside... Take a kadai add ghee and once hot add mustard seeds , allow it to splutter then add black pepper + jeera + cashews + hing powder + chopped ginger , green chili , curry leaves, coriander leaves and then add it to the batter and mix it ..

Take idli plates and grease it with oil and then pour batter in each hole and then allow it to steam till done like normal idlis .

serve hot with chutney and sambhar.

Broccoli Paneer Paratha


Ingredients needed : 

for stuffing :

  • Broccoli - 1
  • Paneer
  • Salt
  • Chilli powder 
  • Jeera powder

For outer covering : 

  • Wheat flour 
  • Water 
  • Salt 
  • Oil



Method : 

For Chapati:

Take a bowl add wheat flour + salt + oil and mix it well and add water little by little knead it well and set aside for 15 to 20 mins.

For stuffing :

Wash and grate Broccoli finely. In a separate bowl grate required amount of Paneer and set aside. 

Heat kadai and add oil + grated broccoli + chilli powder + jeera powder 
and fry for few mins .. 

once done transfer it to a plate and allow it to cool well ...then add the grated paneer and mix it well. 

Now take a small ball size of the chapati dough and make a cup shape with the dough and place a spoon of the stuffing and join all the ends and roll it like chapati ..

repeat the same with rest of dough. Once done , heat a tawa and fry chapati on both sides till done .

Goes excellent with Plain curd and pickle .

Cheese quesadilla



Ingredients:

Uncooked Tortilla - 2 nos (any kind)
Cheese - 1 cup grated cheese, sharp Cheddar or Mexican blend
Butter - 2 tbsp

For Garnish:

Sour cream
Salsa
guacamole 



Cook the Tortillas in a pan, both sides. Spread butter on it while cooking. Layer the cheese over one of the tortilla and then top it up with the other tortilla. Cook over medium heat till the cheese melts down and the tortillas stick to each other. Flip it over in the middle if needed. You do not want to burn the tortillas while doing this :) Once done, serve it with some sour cream topped over it. You can also use salsa and guacamole.

Desi Shells



This is one of my favs. Something that my mom would cook for me and now I do 'em for my kids. My lil son loved it...no doubts about it..Come'on it is macroni shells. Would any kid say no to it. I bet not. So he gets the yummy shells and I get to cook it in desi style. Two happy people and one happy meal :) Now for the recipe.

Ingredients:


Macroni shells - as needed
Tomatoes - 2
Onion - 1
Capsicum/Bell pepper - 1/2
Salt - as needed
Coriander leaves - to garnish
A dash of lemon juice.

Cook the shells as per the instructions in the box. Remember to always put the shells into the water after it comes to a boil and do not make them mushy soft. They need to stay a lil in shape when taken out of water. I add a drop of the oil to the water so that the shells do not stick to each other and also shock them up with some running cold water as soon as I take them off the stove to drain.

For the masala, in a pan add oil. When oil is hot, add mustard seeds. Once they crackle, add onions. Add salt to cook onions fast. Now wait till they turn translucent and then add the tomatoes and capsicum. Cook till they all merge together to form one dry curry...and it gets difficult to separate tomatoes and onions visually. Add the cooked shells to this curry and mix it well. Garnish with some coriander leaves and add a dash of lemon juice to it. You can add green peas, corn if you like to this Desi shells.

Cauliflower Paratha



Ingredients needed : 
for stuffing :
  • Cauliflower - 1/2
  • Onion - 2
  • Coriander leaves
  • Salt
  • Turmeric powder 
  • Chilli powder 
  • Dhaniya powder
  • Jeera powder 
  • Lemon juice
For outer covering : 
  • Wheat flour 
  • Water 
  • Salt 
  • Oil
Method : 


Take a bowl add wheat flour + salt + oil and mix it well and add water little by little knead it well and set aside for 15 to 20 mins.

for stuffing :

Clean cauliflower well and spread it on kitchen towel and allow it to dry well ...Chop onions , coriander leaves finely ...grate cauliflower finely ...


Heat kadai and add oil + onion + salt and fry for few mins . then finally add the grated cauliflower + chilli powder +turmeric powder + jeera powder + dhaniya powder and fry for few mins .. once done add coriander leaves + lemon juice and mix it well ...once done transfer it to a plate and allow it to cool well ...



Now take a small ball size of the dough and make a cup shape with the dough and place a spoon of the cauliflower curry and join all the ends and roll the dough like chapathi ...roll all the dough ..once done , heat a tawa and fry chapathi on both sides till done .

Sweet Paratha



My son likes Peshwari naan a lot tried making it at home ..I used the sweet somasi stuffing and made the paratha ..infact same process just that this is tawa fried ... I am sure kids love this a lot .

Ingredients needed : 

for paratha :
  • Maida - 1 cup
  • Salt - a pinch
  • Oil
  • Water
Method :

Take a bowl add in maida + salt + oil and mix it well and then add water little by little and knead it well till a soft dough is formed ...and allow it to rest for few mins. meanwhile prepare the stuffing ...
 

for stuffing :  

 

 (adjust sugar as per you taste) 
  • Grated coconut - 1 cup
  • Chutney dhal / Pottu kadalai - 1/2 cup
  • Poppy seeds - little
  • Dry Raisins - 10 - 15
  • Sugar - 1 cup
  • Elachi powder - little
Method : 

Grate coconut and keep it aside ..take a blender and add the chutney dhal and using the pulse button grind coarsely ...and transfer it to a bowl and to that add the dried raisins + elachi powder + sugar + poppy seeds + coconut and mix it well..

Method to make Paratha : 

Take a small ball size of dough and make it like a cup and take a spoon of stuffing and place it in the cup and bring the sides of the dough together and roll it into chapathi ...if needed use some flour for dusting ..

Heat a tawa and place the paratha and fry it in both sides ..if needed u can use ghee to fry .

Mixed Vegetable Paratha



Ingredients needed :
for making the stuffing :
  • Mixed vegetable - 2 cup
  • Onion - 2
  • Turmeric powder (opt.) - little
  • Jeera powder - 1/4 tsp.
  • Chilli powder - 1/2 tsp.
  • lemon juice - little
  • Pav bhaji masala (opt.)- 1/4 tsp.
  • Salt 
  • Oil - 2 tsp.
 
Method : for stuffing :

Vegetables I used : 1/2 broccoli , cabbage , carrot , potato , cauliflower .

First peel the skin of potato, chop and boil it with little water till done and mash it well and set aside , peel the skin of carrot and grate it , then grate cabbage and broccoli , cauliflower .. Chop onions finely ..

Heat a kadai and 2 tsp. of oil + onions and fry for few mins. ...then add the grate veggies + jeera powder + turmeric powder + salt + lemon juice + pav bhaji masala powder + chilli powder and fry it for few mins. then add the mashed potatoes and allow it to cook for few more mins. once done allow it to cool well ..

for making the dough : 
  • Wheat flour 
  • Oil
  • Salt
  • Water
Method : for making paratha :

Method 1 :

Take a bowl and add wheat flour + oil + salt and mix it well then add the cooked vegetable mixture and mix it well by just sprinkling little water and make dough and allow it to sit for 15-20 mins ..then take a small ball size dough and roll it like normal chapathi ...Heat a non stick tava and place the rolled paratha and fry it in both sides till done by adding little oil if needed . (this is the method I followed it )

Method 2 :

Make a small ball size of the mixed veggies and keep it ready ...In a bowl add wheat flour + oil + salt and mix it well and then add water and make a stiff dough and take a small ball size of the dough and roll it into small chapathi and place the stuffing in middle and bring together all the edges and roll it again like chapathi and heat it on tava on both sides till done .

Goes excellent with raitha or pickle

    Masala Roti


    Ingredients needed :
    • Wheat flour - 2 cup
    • Pumpkin Puree - 1/2 cup
    • Flax seeds - a handful 
    • Chilli Powder - 1/2 tsp.
    • Ajwain seeds - little
    • Jeera powder - 1/4 tsp.
    • Salt
    • Oil
    Method :


    Chop Pumpkin roughly,take a saucepan and add the pumpkin pieces + water and allow it to cook when it is almost done,take the pieces alone and allow it to cool off completely .. (save the water if any,U can add it while making dough).

    In a blender first take a handful of flax seeds and powder it into fine powder and set aside ...now take the pumpkin pieces and grind it into smooth paste without adding water ...

    Now take a big bowl and add wheat flour+Salt+Oil+chilli powder+flax seeds powder+jeera powder+ajwain seeds and mix it well ..to this add the pumpkin puree and just sprinkle little water start to knead the dough well till u get a soft dough take a small ball size of the dough and roll it into circular disc shape , the same way as u make chapati and heat a tawa and place the rolled chapati and fry it till done on both sides.

    Bread Sandwich


    This is the simple method of making bread sandwich ..made this for my son and gave him a cup of Hot Chocolate - Oats Apple Milkshake ...this combo is very filling breakfast ...I am sure all will enjoy this. 

    Ingredients needed : 
    • Carrot
    • Onion
    • Tomato
    • Cucumber 
    • Paneer (opt.)
    • Chat masala powder
    Method : 
    • Chop Tomato , onion , carrot , cucumber , paneer into thin slices ...take 2 slice of bread ..
    • In one bread place each one slice of onion + tomato + cucmber + Carrot + Paneer and sprinkle some chat masala powder and place another bread slice 
    • prepare the sandwich with the help of sandwich maker and enjoy it with tomato sauce / ketchup
    If you don't have sandwich maker , you can heat the tawa and spread some butter on 2 bread slice and  heat the bread on both sides ...once done u can place a slice of onion + tomato + cucumber +carrot and sprinkle little chat masala and place the other bread slice on top of it and enjoy the sandwich .

    Potato Paneer Frankie


    Saw this recipe in Nithya's  blog and tried it ...it was too good and enjoyed it well Just that I skipped adding chilli lemon / chilli vinegar mixture ...

    Ingredients needed : 
    To make Potato - Paneer Frankie : 


    • Potato
    • Paneer
    • Onions
    • Salt
    • Garam masala
    • Chilli powder
    • Turmeric powder
    • Lemon Juice
    • Corn flour
    • Oil
    Method : 
    • Boil potatoes and mash it well ...Chop onions finely , grate paneer and set aside ...
    • In a kadai add a tsp. of oil and fry the onions + salt once done add mashed potato + Paneer + garam masala + chilli powder + turmeric powder and mix it well ....
    • allow it to cool off completely and then sprinkle cornflour and take some potato - paneer mixture and roll it in oval shape and keep it ready ...
    • Heat a tawa and fry the frankies by adding a tsp. of oil , cook it in both sides till done and set aside ..
    To make Onion - masala mixture : 
    • Chop onions finely and in a bowl add the onions + chat masla + amchur powder and mix it well...
    To make  Masala water : 
    • In a small bowl add the chilli powder + amchur powder + pinch of salt + little water to mix it ...
    To make Chilli - lemon or Chilli - vinegar water : (I skipped this )
    • Chop chillies finely and add lemon juice or vinegar and allow it to marinate for few mins ...
    To assemble frankie :  you need :
    • Roti
    • Potato - paneer frankie
    • Onion - Masala mixture
    • Masala water
    • Chilli - lemon / vinegar 
    Method : 
    • Place the roti in a plate and place 2 frankies in the middle and add onion masala mixture and add little masala water + chilli - lemon / vinegar and fold it tightly and serve and enjoy it ...

    Channa Masala ~ Bread Sandwich

    Ingredients needed :
    • Bread 
    • Black chickpea - 1 cup
    • Potato - 2
    • Onion - 1
    • Carrot - 2
    • Turmeric powder - 1/4 tsp.
    • Jeera powder - 1/2 tsp.
    • Dhaniya powder - 1/2 tsp.
    • Chilli powder - 1/2 tsp.
    • Salt - little
    • Oil
    • Lemon juice
    Method :

    Soak Chickpea overnight and pressure cook it well with required amount of water ( add little salt ,while cooking ) meanwhile , boil the potatoes and mash it well .. chop onions finely and grate the carrots and set aside. Heat a kadai and add little oil and fry the onions + salt and fry it well ..to this add the mashed potato + grated carrots + cooked chickpea and mix it well ...to this add jeera powder + dhaniya powder + chilli powder mix it well and allow it to cook well ...once done finally add little lemon juice ...if needed, can add coriander leaves and enjoy this with bread slices + tomato sauce.

      Paniyaram ~ type 2


      My son is a big fan of paniyaram , he loves this more than dosa...as I had very little dosa batter in hand ,I tried this bread paniyaram ....I have seen bread dosa recipe in many blog ..so tried the same method for  paniyaram ...

      Ingredients needed : 
      • Bread slice - 4 - 5
      • Dosa batter - 1 cup
      • Rice flour - 1 cup
      • Rawa - 1/2 cup
      • Curd - little
      • Salt
      • Onions - 1
      Method :  

      Finely chop onions and set aside .. Dry grind bread slices in mixie , till it becomes like a powder ...In a bowl add the bread powder + rawa + rice flour + dosa batter + salt and little curd + chopped onions  and mix it well. Heat the paniyaram pan and add little oil in all the holes and once it is hot pour in the batter and allow it to cook well on both sides and serve hot with any  chutney or Idli milagai podi.

        Aval Uppuma



        Saw this recipe in a tv Prog. and tried it ...It is a very healthy dish ...loved the idea of adding ponnangani keerai to the aval uppuma .

        Ingredients needed :
        • Aval / Rice flakes (Thick ) - 2 cups
        • Ponanganni keerai  - 1 bunch
        • Onion (Chopped finely)   - 1
        • Groundnuts - handful
        • Coconut grated - little
        • Mustard seeds
        • Urid dhal
        • Jeera
        • Dried red chillies- 1
        • Chili powder - little
        • Turmeric powder 
        • Lime juice
        • Salt
        • Oil 
        Method :

        Remove each leaves from the stem and clean it and set aside ...though bit a tedious job , but worth doing it ... In a bowl add the aval and add enough water , till the aval gets immersed well ...then immediately , drain all the water fully and set aside for 10 or 15 mins.Heat a kadai and add little oil and temper it with mustard seeds + urid dhal + jeera + groundnuts + dried red chili then saute the onions well and then add the ponnangani keerai and saute it for few mins ...
        to the fried onions + ponnangani keerai add little salt + chili powder + aval and mix it well for few mins. till done ..then switch off the flame, and add the grated coconut + lime juice and stir it well ...

          Cabbage Carrot Paratha



          Ingredients needed :
          • Wheat flour 
          • Cabbage
          • Carrot
          • Chilli powder
          • Jeera powder
          • Salt
          • Water
          • Oil

          Method :

          Clean and grate cabbage finely ...Peel the skin of carrot and grate it finely ...In a bowl mix the grated cabbage + carrot + salt and mix it well to that add the wheat flour + chilli powder + oil and mix it well and then add little water and mix the flour well till u get the soft dough ... (photo 2 ) (Check Note *)now take a small ball size of the dough and using ur rolling pin make paratha like a normal chapathi ....heat the tawa and fry on both sides the rolled parathas ... 
            Note *  : (photo 3, 4, 5) I am not that very good in rolling the stuffed paraths ..so I prepare  (a outer covering ) little plain chapathi dough ...and take a small ball size of the dough and roll it very thinly and place the stuffed dough , in middle and then form it in round shape and then roll the parathas and fry it ...
