Spicy Salmon in a bed of veggies(Baked)


When Gayathri has been posting some healthy soups this week, I knw I entered into the scene uninformed with a not-so-healthy yet yummy(i'll go always for the yummy stuff than the healthier one ;) ) fish fingers in my last post. Everything is fair in love n war. I think food shud also be added to it...Wat say guys ;) Nw, to make sure that I'm on track with Gaays, I've added this healthy version of fish. Yeah, itz a Baked Spicy Salmon on a basket of veggies. If you are not much of a veggie lover, try tis...I'm sure you will gulp down more veggie than you imagine..Now letz move on to the post...

Ingredients:
  • Fish (I used Salmon)
  • Fish Fry powder or any spice pdr of ur choice
  • Veggies of your choice
  • Pepper pdr 
  • Salt

Preparation:

Apply Fish fry powder paste to the fish. You can also substitute the fish fry pdr with chilli pdr, garam masala, turmeric pdr and lil salt. Marinate fish for half an hour.

Preheat oven to 450degrees. Meanwhile cut veggies of your choice. I used onions, garlic pods, tomatoes, capsicum, bittergourd, brinjal, carrot. To this veggies add lil extra virgin olive oil, salt and chilli pdr. You can omit chilli pdr if you want to. Now grease the baking pan and then spread the veggies. Top it with the marinated fish. Add some pepper pdr to the fish. Bake it for 10 minutes on both sides.

Squeeze some lemon juice and garnish with some coriander leaves before serving.

Baked n Microwaved (Baby) Potato Fry


Ingredients:
  • Oil - 2 tsp
  • Baby potato - 4 or 1 large potato
  • Chilli pdr - as req
  • Turmeric pdr - as req
  • salt - as req
Preparation:

Preheat the oven to 250degree.
If using baby potatoes, then cut them to halves. Else if using normal potatoes, then you can cut them to bite size pieces.
Mix Chilli pdr, turmeric pdr and salt in oil and then marinate the potato in this for sometime.
Bake the marinated potatoes in a conventional preheated oven for 5 minutes. After it is baked, take the potatoes out, give them a stir and then microwave it on high power for 8 minutes.

Crunchy and healthy potato fry is ready. It is an excellent appetizer and also goes great as a side dish.

Baked Masala Peanuts



Preheat the oven to 450F.

Mix all the spices like red chilli pdr, coriander pdr, cumin pdr, turmeric pdr, garam masala, salt (you can vary this as per ur taste) using lil water to make a paste. Apply this paste to the Peanuts. Spray some cooking oil to it and then allow it to marinate for 5 mins.

Then on a baking sheet, apply some oil and spread the masala marinated peanuts on to the plate. Bake it for 20 mins. Make sure you toss the peanuts halfway. After 20 minutes, switch off the oven. Remove the plate from the oven and allow it to cool for 5 minutes. After 5 minutes, itz time to taste the yummy peanuts :)

This is one of those, easy to make yet yummy to taste snacks....So don't fail to give it a try...

Baked Samosa


Ingredients:

Spring roll(Samosa) pastry sheets
All purpose flour mixed in lil water or egg white - for pasting the ends of samosas

Filling:

Anything of your choice

Preparation:

I used leftover potato sabji as filling...To the sabji I added some frozen peas, coriander leaves and grated mozeralla cheese. Cooked it in medium flame for 5 minutes. My samosa filling was ready. You can substitute this with any filling of your choice. If you need guidance in preparing the filling too, then chkout my fried samosa recipe for the same.
Preheat oven to 400F. Cut the square pastry sheet in the middle to get 2 long strips. Make cones out of each strip. Fill it with ur filling and then paste the corners using maida(APF) paste or egg white.

spray some oil on the baking sheet.Also spray some oil over the samosas. Place them on the baking plate and bake it for 20 minutes, flipping it over in the middle.
Healthy baked samosas are ready to be served.

Baked Chicken Meatballs


This is one of those posts which have been lying around for a while inspite of the gud comments it got from hubby dear...Shud I say I was too lazy enough to pen down the details or was I too immersed with my other recipes ...hmm...since the second option sounds in favour for me, i wil go with the later ;)

Before proceeding with the recipe, I've got a special thanx which is to be delivered to my dear buddy "Athi"..yeah, the reason behind the thanx being, for pushing me to write down the recipe :) nt sure if i wud hav made it up to this point if nt for her asking me...Thanx Athi...otherwise I wud have totally forgotten abt tis and one fine day have no trace of how I came up with this dish...tatz hw i miss most of the yummy dishes details :(

Ingredients:
  • Ground Chicken - 1 packet (You can also grind the chicken if u cannot catch hold of ground chicken in store)
  • Spices of ur choice (Have listed wat i've listed in the recipe)
  • Egg - 1
  • Finely Grated parmesan
  • Dry Basil - 1 tsp
  • Oil
  • Coriander leaves
  • Finely chopped garlic - 5

Preparation:

Preheat oven to 400 degrees F.

To the ground chicken, add spices of ur choice. I used turmeric pdr, salt, pepper pdr, cumin pdr, corriander pdr, red chilli pdr, garam masala. Add some finely chopped garlic, coriander leaves,egg, finely grated parmesan,dry basil to the ground meat. Knead it for a few minutes. Add a lil oil to the meat and then make round balls from it.

In a baking sheet apply some oil, and place the ground chicken balls on it. Spray some oil over the balls finally and then bake them in the oven till the color turns golden brown.

Easy Baked Chicken

Ingredients:
  • Chicken Breasts
  • Any salad dressing - I used Ranch
  • Mayonnaise -  I used low fat Mayo
  • Bread Crumbs

Preparation:

Preheat oven to 450F

Slice the chicken breast in the middle such that you get a butterfly kinds shape....If you juz cannot figure out wat i am trying to mean, no pbm...juz leave the chicken breast undisturbed. Wash it well..tat is all u hav to do..hope tat was easy to follow ;)

Now, in a plate pour some salad dressing(ranch) and Mayo...In another plate pour some bread crumbs.
Dip the chicken into the ranch-mayo sauce such that the chicken is fully covered with the dressing on both sides..Then dip it into the bread crumbs, making sure tat the crumbs stick all over the chicken...Then place the chicken on a baking sheet and into the oven for about 15 - 20 mins...Flip halfway....Your easy baked chicken is hot and ready to be served :)

Spicy Chicken Biscuits (Baked)

Ingredients:
  • Boneless Chicken
  • Cumin pdr
  • Corriander pdr
  • Turmeric pdr
  • salt
  • EVOO (Extra Virgin Olive oil) - You can sustitute this with oil of ur choice
  • Pepper pdr
  • Chilli pdr
  • Garam masala
  • Cumin seeds
  • Low-fat Cheese(opt)
  • Coriander leaves
Preparation:

Preheat the oven to 350.
Cut the chicken to small pieces and grind them to almost paste like texture. Make sure you don't have lumps of chicken in the grinded paste. Don't use water.
To the grinded chicken add the above ingredients. You can also substitute this with spices of your own choice and also vary it as per your req. Once the masala's have been infused into the chicken, make balls out the chicken. Once you make a ball, juz press them a lil in the center to make it into round shape.You can also show your creativity at this point and make as many shapes as you can.
Now place them on a oil-sprayed sheet of a baking tray. Spray oil once after placing the chicken pieces on the tray.
Bake the chicken for about 5 minutes on one side and then flip the chicken pieces and bake them for another 5 mins. If needed, you can also cook the chicken for some more time. It juz depends on how well you want your chicken cooked.

Yummy Spicy Chicken Biscuits are ready to serve.

Baked - Potato Stuffed Mushroom


Ingredients:
  • Whole Button Mushroom - 1 packet (8 oz)
  • Mozeralla cheese (or any grated cheese of your choice)
For stuffing:
  • Oil - 1 tsp
  • Cumin seeds - 1/4 tsp
  • Grated potatoes
  • Green chilli finely chopped (opt)
  • Chilli pdr - 1 tsp
  • coriander pdr - 1/2 tsp
  • Cumin pdr - 1/4 tsp
  • Methi leaves - 10 to 15
  • salt 
  • Coriander leaves

Preparation:

Slice the stem of the mushroom to make a hollow in the mushroom. You are gonna put the stuffing here.

For the stuffing:
Grate potato. In a pan, add a tsp of oil+ lil cumin(opt) + grated potato + chilli pdr + cumin pdr + coriander pdr + methi leaves + coriander leaves and salt.

Fry till the potato gets well cooked, kinda gets mashed and the spices smell leaves.

You can modify the above to ur taste.

Once the stuffing gets cool, insert it into the mushroom. Fill in as much as u can such that you don't leave any room inside the mushroom. Top up the mushroom with grated cheese. I used Mozeralla grated cheese..You can use any cheese of your choice.

Preheat the oven to 450 F.

Spray some oil in the baking sheet and then line the stuffed mushrooms. Leave them in the oven to get cooked for minimum 10 mins.

Yummy Potato stuffed Mushrooms are ready. Serve it with tomato ketchup.

"Baked" Cauliflower Manchurian



Now here comes another "Baked" avatar of a deep fried item. Yeah, I know many people who thou knew how to make Cauliflower Manchurian and loved it never tried it out frequently cos of guess wat..hehehehe...OIL. I'm sure this recipe which is totally baked would bring a smile bac to their faces and tastebuds.

Ingredients:

To make Batter:
  • Cauliflower - 1 medium sized
  • Ginger garlic paste - 1 tbsp
  • Chilli pdr - 1 tsp
  • Corriander pds - 1/2 tsp
  • Cumin pdr - 1/2 tsp
  • Amchurn pdr - 1/4 tsp
  • Pepper pdr - 1/4 tsp
  • Cornflour - 2 tbsp
  • Water
  • Salt

To make sauce:
  • Oil - 1tbsp
  • Onion - 1 medium sized
  • Capsicum - 1/2
  • Ginger garlic paste - 1 tsp
  • Green Chilli - 1 (opt)
  • Soy sauce - 2 tbsp
  • Tomato sauce or ketchup - 2 tbsp
  • Chilli sauce - 1 tsp (opt)
  • Spring onions - 1Corriander (opt)


 Preparation:

First make the batter with the above mentioned batter ingredients. Make sure that the batter is a lil thick.It should not be too watery.After making the batter, allow it to rest for 10 mins. Then spread it on a baking sheet and bake it in a preheated oven (400 F) for 15 to 20 mins. If the batter is not of the right consistency (lil watery) it might take some more time.

Coming to the next step, sauce preparation:
Oil + Onion + Spring onion white bulb portion (opt) + green chilli (opt) + Ginger garlic paste + soy sauce + tomato sauce + chilli sauce + baked cauliflower



Garnish with the remaining portion of spring onion or corriander leaves. Serve hot with roti, paratha or Dosa.

"Baked" Onion Pakodas




Ingredients: (Translation)
  • 1 cup Chickpea Flour (Besan)
  • 1 small Onion, chopped fine
  • Some Cilantro leaves, finely chopped
  • 2 small green Chilies, chopped fine
  • ¾ tsp Baking Powder
  • 2 tbsp Butter, melted
  • Salt as required

Procedure:

Mix together besan + onion + cilantro + green chilies + baking powder + butter + salt to make a thick batter. Add little water if needed. Keep aside.Line a cookie sheet with aluminum foil. Take small portions of the pakoda batter and arrange them on the cookie sheet in a manner that they won’t touch each other.Preheat the oven at 400 F. Then place the cookie sheet and bake for 20 minutes or until the pakodas turn golden brown in color.
