Ingredients :
- vegetables ( Drumstick , Small Onions , Brinjal ,Ladys Finger ) or ( sundaikkai Vathal , Manathakaali Vathal )
- Tamarind
- Sambhar (Millagai) Podi (See below for preparation)
- Turmeric Powder
- Salt to taste
- Hing
- Curry leaves
- Mustard
- Urid Dhal
- Channa Dhal
Ingredients needed :
- Dried Red Chillis
- Dhaniya Seeds
- Urid dhal
- Channa Dhal
- Toor Dhal
- Hing
Dry Roast all the above ingredients and powder it into fine powder.. U can also store it for more days...
Method for Preparing Vatha kulambu :
Heat Kadai and add oil and temper it with the above ingredients . Add the reqd. vegetables , curry leaves , salt ,hing,turmeric powder and then, add the diluted tamarind water ,Smabhar (milagai ) powder and allow it to boil...once the Kulambu gets thicker ..switch off the stove..
Notes :
if using onions or lady's finger ,sundaikkai vathhal then fry it well first and proceed , if using Manathakkali vathaal or sundaikkai vathhal no need any vegetables for better results and aroma temper the ingredients with Gingely oil / Seasame oil
