Mixed Veg Corriander Kurma


INGREDIENTS
  • Mixed Veggies (potato, carrot, beans, cauliflower, broccoli, peas)
  • Onion - 1 medium chopped
  • Tomato - 1 medium chopped
  • Whole cardamom (Cloves, Cinnamon, cardamom)
  • Oil
  • Cumin seeds - 1 tsp
  • Green chilli - 3
  • Garam masala - 1/4 tsp
  • Coriander pdr - 1 tsp
  • Kasthuri methi - 1/4 tsp
  • Salt

FOR MASALA: (grind the below mentioned with lil water)
  • 2 tbsp fresh grated coconut (if u want to minimize the coconut quantity, then replace this quantity with 1 tbsp of coconut + onion slices)
  • 2 tbsp roasted chana dal
  • 2 tbsp cashews
  • 4 green chillis
  • 1/2 bunch cilantro
  • 4 garlic cloves
  • 2 inch ginger
Preparation:

Oil + Whole garam masala + Cumin seeds + Onion -> saute till translucent
Add tomato, veggies and cook for another 10 mins. If needed, sprinkle some water. After making sure that the veggies are almost cooked, add the grounded masala -> saute for 5 mins till the oil leaves. Add garam masala, kasthuri methi, coriander pdr, water to the required consistency, salt and cook on low flame for another 10 mins. Mixed Veg Coriander Kurma is ready to serve. Goes best with rice, dosa and roti.
