Pesarattu
Moong dhal around 2 cups soak for 4 - 5 hrs or over night and grind with jeera, green chillies , ginger and little onion. Can also season the batter.. Add salt and make dosas.
Adai
Rice - 3/4 cup
moong dhal - 1/2 cup
channa dhal - 1/2 cup
thoor dhar - 1/2 cup
sabodhana - 1 or 2 spoon( Optional for dosas to be little crisp and tasty)
Soak all of the above for 3 - 4 hrs and grind with red chillies, little onion, jeera and pepper flakes( very few).
Add salt and seaon with mustard, ingu, curry leaves.make dosa
Rava dosa
Rawa( sooji fine/ semolina) - 3 tsp ( multilply by number of person)
maida - 2 tsp ( ")
rice flour - 1 1/2 ( ")
Mix and add salt and lot of water( to be very dilute). Seasoning optional of mustard, chopped green chillies, jeera, pepper flakes, chopped ginger,ingu, curry leaves....you can add all or omit the one you want.
Keep aside for sometime and make dosas..just pour and don't spread...takes a little more time to cook than ordinary dosas ...so leave it alone and then turn or roll.
Vegetable palav
Basmati Rice - 2 cups
onion - 1 large
garlic - around 8 to 10 flakes
ginger a small piece
green chillies- as spicy as needed or around 6
fennel seeds - few
jeera - few
cinnamon - a small piece
cloves 1 or 2
cilantro - if u want the rice to be very green in colour
bay leaf, cardamom
vegetables - as desired
Mint leaves
To grind
garlic,ginger,green chillies,fennel seeds,jeera, cinnamon,cloves, cilantro
Chop onion length wise. In a pan add oil . First start by adding jeera, cardamom,bay leaf
optional of adding cinnamon and cloves. Then add and fry onions till brown and then add the desired vegetables and fry for sometime . Next add the mint leaves and the ground masala. Cook for few mts
Soak rice for 10 mts. Add the rice to the masala and cook either in a pan or rice cooker
Ghee Rice
Soak Basmati rice for few mts....In a pan add oil...when hot add jeera ,cardamom,clove and cinnamon....next add finely chopped onion ( Lenghty Ones)...next add slit green chillies and then ginger garlic paste or ginger gardlic finely chopped ...cook till onions are transparent and add mint leaves....add this masala to the rice and add peas...coconut milk , ghee or butter and enough water and salt...season with cashew and raisin
