Potato Kurma


Ingredients:
For Masala:
  • Oil
  • Green chilli - 1 or 2
  • Onion - 1 medium
  • Garlic pods - 3
  • Ginger - 1/2 inch
  • Coriander pdr -  1tbsp
  • Turmeric pdr - 1/4 tsp
  • Curry leaves - 5
  • Oil
  • Cloves - 3
  • Cardamom - 2
  • Cinammon - 1 stick
  • Onion - half of medium
  • Tomato - 1 medium
  • Potato - 2 or 3 large
  • salt - as req
  • Coconut (opt) - 1 tbsp
  • Sombhu(opt) - 1 tsp
  • khus khus(opt) - 1 tsp
  • Coriander leaves - for garnish

Preparation:

To heated oil, add green chilli + onion + garlic pods + ginger. Saute till the onion turns translucent. Add coriander pdr to it on a medium flame and saute for a minute. Then switch off the flame. To this masala, add turmeric pdr + curry leaves. Grind it to a paste.

In heated oil ,add whole cardamom (cloves, cardamom, cinnamon) + half of finely chopped onion and saute till it becomes golden brown. Then add tomato and saute till it becomes mushy. Add potatoes and the ground masala. Add water as req, salt and allow it to cook on a medium flame. You can wind up with ur potato kurma at this stage or go ahead and add coconut + sombhu + khus khus paste at the final stage of cooking. When the kurma starts to juz boil, switch off the flame and garnish with some coriander leaves.
