Sweet Potato Cutlet

Saw this recipe here, luckily I had all the ingredients in hand and tried it immediately  for evening snacks .. we enjoyed it so well and it was so filling ...Made few changes to the original recipe ..



Ingredients needed :
  • Sweet Potato - 4
  • Paneer grated - 1/2 cup
  • Roasted gram dal / Pottukadali  - handful
  • Chili powder
  • Salt
  • Garam Masala powder
  • Amchur powder
  • Turmeric powder (opt.)
  • Onion (to garnish )
  • Oil
  • Bread crumbs




Method :

Peel the skin off sweet potato , and roughly chop into pieces and in a kadai add water + sweet potato pieces and boil it well and cook it till done ...once done , drain all the water and allow the sweet potato to cool off completely and mash it and keep it ready ..ground the roasted gram dal in to fine powder and keep it aside ...grate the paneer and take it in bowl and to that add salt + chili powder + garam masala powder + turmeric powder + amchur powder + grounded roasted gram dal powder + mashed sweet potato and mix it well to form a dough  ...
 
Now take a small portion of the dough and make like patties and and roll it in bread crumbs and assemble it in a plate and keep it in fridge for 30 mins. or in freezer for less than 10 mins. ...this is done to make the patties slightly firm ...and it will retain it's shape when frying ....after 30 mins. or 10 mins. remove it and heat a tawa and shallow fry these on both the sides till done ...serve it with tamarind - sweet chutney (I used ,  Maggi tamarina sauce )  and garnish it with finely chopped raw onions .

    Cabbage Pakoda



    Ingredients needed : 
    • Idli  batter - 2 cups
    • Roasted rava - 1/2 cup
    • Purple Cabbage 
    • Onions
    • Chilli powder
    • Jeera powder
    • Salt
    • Oil for frying. 
    Method :

    Clean and chop finely cabbage and chop onions too ..in a kadai dry fry the rava for few seconds... In a bowl , add idli batter and add chopped cabbage + chopped onions + roasted rava + chilli powder + jeera powder + salt and mix it well ...if needed just sprinkle some water ...now heat the kadai and add oil for deep frying , take a small ball size of the above dough , once the oil is hot ...drop it slowly in hot oil and deep fry it well  , till done ...
      Crispy cabbage pakoda is ready ...You can also use the normal cabbage and make it ...as I used the purple cabbage it gave this dark colour ...

      Gujarati Dal ~~ ICC



      The recipe chosen for this month challenge in Indian cooking challenge by Srivalli is Gujarati dhal from the book , Sukham Ayu written by Prathibha and Jigyasa's . Thanks a lot to both of them to share the recp. with all of us ...
      I am very late in posting this month challenge ...well , the reason is I couldn't get the required vegetables ....only s.day I got Yam and drumsticks ...I couldn't get dried dates ...so used the normal ones...rest all followed the same recp. and made this immediately, for s.day night dinner ...it was so easy to make and it tasted delicious ...we had it with hot rice and potato curry ...

       Ingredients needed : 
      • Toor dhal - 1/2 cup
      • Tamarind juice
      • Dry dates - 4 pieces
      • Jaggery little
      • Yam 
      • Drumsticks
      • Groundnuts - handful
      • Green chillies - 2
      • Turmeric powder
      • Dhaniya powder
      • Jeera powder
      • Garam masala
      • Salt 
      for tempering : 
      • Ghee
      • Mustard seeds
      • Methi seeds
      • Jeera 
      • Dry red chillies
      • Hing powder
      • Curry leaves

      Method :

      Pressure cook toor dal till done and then mash it well and transfer it to the kadai to the cooked dhal add yam + drumsticks + tamarind juice + pitted dates + groundnuts + jaggery + green chillies and add more water and allow it to cook well to this dal add all the rest of ingredients : salt + dhaniya powder + cumin powder + garam masala and cook it well till the veggies get cooked in a seperate kadai add ghee and temper with the given ingredients and add it to the dhal ...and serve it hot with rice ...

        Stuffed Aloo Tikki

        As my system is not working fine ...couldn't continue with blogging marathon ...Hope I get a new system soon .. from s.day evening , my system is working fine again ...seems ok now ....not sure how long I can continue with this ...Thanks a lot to all my friends , who gave such a wondeful support and comments last week ...Hope to join the in next blogging marathon soon ...


        Ingredients needed :
        • Potatoes 
        • bread crumbs
        • Oil
        • Salt 
        for stuffing :
        • Onions 
        • Carrot
        • Capsicum
        • Salt
        • Turmeic powder
        • Chilli powder
        • Jeera powder 
        • Garam masala powder
        • oil
        • Coriander leaves
        • lime juice



        Method : 

        Pressure cook the potatoes and once done , peel the skin off and drain all the water and set aside ...Chop all the vegetables (onions + capsicum + carrot ) finely ...heat a kadai and add little oil and onions + capsicum and fry for few mins.  ...and finely the carrots + salt +turmeric powder + jeera powder + garam masala powder and fry well till done ...switch off the flame and then add the coriander leaves and lemon juice and mix it well and allow it to cool completely ..
        now mash the potatoes well and add little salt and mix it well, in a plate have the bread crumbs ready ... take a medium ball size of the potato and flatten it in ur palm and take a tsp. of the cooked vegetable mix in the centre and close it with the mashed potato , ie., form it like a ball ...and flatten it gently again in ur palm and set aside in a plate ....
        do the same for rest of tikkis ...and roll it with bread crumbs on both sides ....(as shown in above picture)now heat a kadai / tawa and add just  2 or 3 tsp. of oil and fry these tikki's well till it is done ...I took a small kadai and fried the tikki one by one ...flip it other side very gently ...so that tikkis retain it's shape U can also shallow fry it with little oil ...

          Vegetable Cutlet


          Ingredients needed : 
          • Potato - 2 
          • Onion - 1
          • Beetroot - 1/4
          • Chillipowder 
          • Salt
          • Oil
          • Bread crumbs

           

          Method :

          Pressure cook potatoes and mash it well ...Peel the skin of beetroot and grate it and keep it aside ...Chop the onions finely and in a bowl add little salt + chilli powder + mashed potato + grated beetroot and mix it well ...
          take some potato mix and make it like a patties and roll it in bred crumbs and then set aside ...heat the tawa , and fry these cutlets on both sides by adding little oil and serve it hot ...
            these colourful cutlets will surely attract the kids ....and u may also shape it in small ball size and make it as koftas and insert a piece of soup sticks and serve it as lollypop ...they will surely enjoy it ...for my son , I just inserted soup sticks in the cutlets and gave him he enjoyed it a lot ...

            Rava Ladoo


            Got this recipe along with the photo from my friend Lavanya ...Today being the third day in blogging marathon , I chose the sweets category ... thanks a lot Lavanya ,  u saved my day ...

            Ingredients :
            • Rava/Sooji - 1cup
            • Sugar - 1/4 cup
            • Milk - 1/2 cup
            • Grated  coconut - 1/4 cup
            • Cashews - 5-10 (according to your love for cashew)
            • Raisins - hand full
            • Ghee - 2tbsp

            Procedure:

            For the entire procedure keep you stove in medium flame. In a pan roast the cashews and Raisins with ghee until they become golden brown. Add the grated coconut and fry till you smell the coconut and ghee (not more than 1-2mins) Now add the rava/sooji and keep tossing until the rava turns slightly brown.Add the sugar and keep stirring until the rava,sugar and coconut along with the cashew and raisins mix well. Its now time to add the milk. The caramelized sugar would have already helped the ingredients to mix well. So add milk appropriately so the mix is in a consistency of making ladoos.
            Now switch off your stove and allow the mixture to cool.  At medium heat, start making the ladoos.
            Never let the mixture to cool down completely, then its not possible to make ladoos.

              PS: Consistency of making ladoos means, when u take a little amount of the mixture and try to make a ball, it should not fall apart.

              Update from Lavanya :(few had doubt with the Rava and Sugar ratio  )

              Its definitely 1/4cup of sugar and 1 cup of Rava. This proportion gave a correct sweet taste. @ suma, The milk helps to give a kind of wet texture to mixture which will help you to make ladoos. otherwise the mixture will fall apart. Also, milk gives an extra flavor.

              Cauliflower rice

              Ingredients Needed :
              • Cauliflower - 1
              • Onions
              • Tomato 
              • Capsicum 
              • Paneer cubes 
              • corriander leaves
              • Chilli powder
              • Salt
              • Turmeric powder
              • Jeera powder
              • Dhaniya powder
              • Oil

               




              Method :
               
              Pressure cook rice seperately and keep it ready. Chop onions + capsicum + tomato ...clean cauliflowers and chop florets into pieces. Heat a kadai and add oil + fry paneer cubes well and set aside then add  onions + capsicum and fry it .then add tomatoes + cauliflower florets + salt + chilli powder + jeera powder + dhaniya powder + turmeric powder + little water and cook it well till done ....
              meanwhile spread the cooked rice in a big bowl ...and then add this prepared cauliflower gravy and if needed u can add little lime juice and mix it gently ..so that it spreads evenly ...and then garnish with corriander leaves apt for lunch box ...make sure u make the gravy bit spicy ...only then when mixed with rice it tastes good ....goes excellent with chips or raita.

              Red Kidney bean Koftas


              When Srivalli , announced about Blogging Marathon , wanted to participated in it ...and she sent me details about that ....she has given some 7 categories ..and also gave a special note that this time alone , we can choose daily one category ...so hoping that will continue posting the recipes on all the seven days without any hindrances ...and here are the list of fellow bloggers , who are taking part in this marathon ....


              Well Coming to the recipe , Today I chose the snacks category ....My son is a big fan of koftas ...often I do koftas ...just keep changing the ingrendients ...

              Ingredients needed :
              • Red kidney beans - 2 cups
              • Oats - 1 cup
              • Bread crumbs 
              • Salt
              • Chilli Powder
              • Lime juice
              • Oil
               Method :

              Soak red kidney beans overnight and pressure cook it well , till done. Soak oats in water and leave it for 5 mins ...then squeeze the water fully and keep it aside You can also add just the powdered oats drain the excess water in red kidney beans and grind it coarsely, just use the whip/pulse button and do it for few secs. to the grinded beans add the oats + salt + chilli powder + lime juice and mix it well now take a small ball size of the dough and roll it well in bread crumbs either u can deep fry these koftas in oil or use paniyaram pan and add little oil and fry it well ...keeping the flame in medium so that it gets cooked well. You can enjoy these with tomato sauce ...

                Easy Chicken varuval



                Ingredients:
                • Turmeric pdr - 1/4 tsp
                • lemon juice - 1 spoon
                • red Chilli - 5
                • Coriander pdr - as req - I used 1 tbsp
                • Pepper pdr - 1/2 tsp
                • Chat masala - 1 tsp
                • Aniseed - tsp
                •  Onion - 1/2 of a large onion
                • Ginger garlic paste - 1 tbsp

                Preparation:

                clean and cut chicken into small pieces. Soak red chilli in hot water and then grind it with lil lime juice to a paste. Marinate chicken with ground paste + turmeric pdr + coriander pdr + chat masala + salt.

                To a wide pan, add oil. When the oil is hot, add aniseed + curry leaves + onion + gg paste + chicken + water sprinkle for the chicken to cook + if req salt + lastly sprinkle some pepper pdr if req. + corr. leaves.

                Note : Change the spice level as per ur taste.

                Arisi - Paruppu Sadam




                Got this excellent rice dish from my dear friend Padma . you can even enjoy this with vadam or chips ...

                Ingredients :

                • Karamani / Thatta payaru - 1 cup
                • Rice (Sona Masoori ) - 1 cup
                • Onions
                • Tomatoes
                • Sambhar powder
                • Turmeric powder
                • Jeera powder
                • Dhaniya powder
                • Salt
                • Oil
                • Corriander leaves
                Method : 

                Soak Karamani overnight and pressure cook it just for one or two whistle ...make sure you don't mash it or over cook it . Chop onions and tomatoes finely In a pressure pan / cooker  add oil and once hot add onions + salt and fry well then add the tomatoes + sambhar powder + jeera powder + turmeric powder + dhaniya powder + corriander leaves and cook well ....then finally add the half cooked karamani and rice and add water (My ratio is Rice : water - 1: 1 3/4 or 2)...and pressure cook it for 3 whistles or till done ..

                  Spaghetti & Veg.Kofta curry




                  This is a very special post to me ...I would like to thank Kavitha , for giving me encouragement to try these dishes ....even s.day I recd. a comment from one of the reader for my Fried rice , saying add soya sauce to this dish it will taste too good ...well , if u have noticed my recipes will have very less usage or to say for some I wouldn't have used Soya sauce , Ginger - garlic , and all masala items like Pattai , sombu , krambu ....well the main reason is my Husband is against to all these items ....he doesn't like it at all ...have to do all the dishes without these items ...off late I wanted a good chage in my method of cooking ..taking lot of guidence from Kavitha , I started to use these ...if not for my husband , My son is loving these kind of dishes .. so avan pera solli naan nalla enjoy panren ... and I just say to my husband that ... Naan deep fry pannala ...spaghetti is made of wheat , it is a vegetarian dish ..so why not try it ??? result - He too is loving it ...my problem solved ...thanks a lot Kavitha ....




                  Ingredients :

                  • Spaghetti 
                  • Potato
                  • Onions
                  • Beans
                  • Carrot
                  • Capsicum
                  • Tomatoes
                  • Tomato - chilli sauce
                  • Ginger - garlic paste
                  • salt
                  • Jeera powder
                  • Chilli powder
                  • Oil
                  • lemon juice (opt.)
                  • Corriander leaves (opt.)


                  Method :


                  for koftas : 

                  Pressure cook Potatoes and mash it well and keep it ready ...
                  finely chop onions and in a bowl add the mashed potatoes + onions + salt + chilli powder and mix it well ....

                  In a plate have some bread crumbs ...take a small ball size of potato - onion mix and roll it in the bread crumbs ...and either you can deep fry the balls or you can use the Paniyaram pan ... (I used the paniyaram pan ...ensure the pan is in medium heat ...) and make the koftas till u get golden brown colour ....and keep it aside ...
                    for gravy part : 

                    finely chop all the veggies (Carrot + beans + capsicum + onions + tomatoes )
                    heat a kadai and add oil , once it is hot add ginger - garlic paste and saute it for few secs.  ..then add onions + salt and fry well then add tomatoes, cook it well ...then add all the chopped veggies + jeera powder + chilli powder + and little water and allow the veggies to cook well ...once it is ready , switch off the flame and add lemon juice + corrainder leaves and mix it well...keep little gravy aside and then mix gently ...the koftas to the gravy and keep it aside..make sure u don't break the koftas...
                      For spaghetti :


                      I took some 10 to 12 sticks and broke it into half ...and in a pan add water and little salt + oil + spaghetti sticks  and allow it to boil well  ..till the spaghetti gets cooked ..then drain the excess water if any and can be used in making the above gravy part also ...rinse the spaghetti in cold water and set aside ....now mix the spaghetti and the little gravy well ...in a plate place this spaghetti and add the kofta gravy on top and serve it imm.
